This emulsifies extremely well but is buttery soft and smoothe before you add water. My only reason for not giving five stars is that it has a very slight odor that is almost nutty or rancid - nothing off-putting to a normal person it's probably unscented but I have a very strong sense of smell so it's just ever so slightly subtly there. I am glad it isn't perfumed
