Whole Grain Bread Rising Agent
I use a pinch of this in my whole grain breads. For years, I made bread that was delicious, but didn’t rise as much as I wanted. Gluten flour helps, but I thought there must be something I was missing. An internet search led me to try absorbic acid. Many people said it was not good or unnecessary because commercial breads contain it to lengthen shelf life.
I wanted it to encourage a better texture. When I tried it, the “shelf life” of my breads decreased dramatically because my family loved it so much more than before.
