Check my banana/cocoa GFr cake with psyllium husk

I am gluten intolerant but I adore baked goods! So I made this recipe with psyllium husk that has perfect texture! My husband and my colleagues adore it 🙈 Ingredients - Banana purée – 200 g (≈ 3/4 cup) - Honey – 3–4 tbsp - Olive oil (I use Pomac) – 3 tbsp - Oat flour – 120 g (≈ 1 cup) - Corn flour – 80 g (≈ 2/3 cup) - Psyllium husk – 1 tbsp - Warm water – 6 tbsp (for psyllium) - Cocoa powder – 2-4 tbsp - Coconut flakes - 1 tbsp (optional) - Baking soda – 1/2 tsp - Salt – a pinch 1. Mix psyllium with 6 tbsp warm water and let it thicken for 5 minutes. 2. Combine banana purée, honey and olive oil. 3. Add the psyllium gel and mix. 4. In another bowl, combine oat flour, corn flour, cocoa, coconut, baking soda and salt. 5. Add dry ingredients to the wet mixture. If the batter is too thick, add a little water or any kind of milk. Batter should be thick but spoonable. 6. Pour into a baking tin (I use 2 small ones). 7. Bake at 180°C / 350°F for 25-30 minutes until a toothpick comes out clean. Enjoy!

Works well in GF baking!

I have used this psyllium husk in baking gluten free bread. In combination with ground chia and arrowroot, it produces perfect pita breads from oat or quinoa flour (or a blend), baking the pitas at 450-500 degrees F. I transferred it to glass jars for storage. It does not have any taste. It is high quality and does not have impurities.

I add a heaping TBSP to a glass of water every morning. It really, really helps with my GI tract. It needs to be consumed very soon after adding it to liquid because it will become more and more gelatinous and more unpleasant to eat. I like that it's whole husk and organic. Good fiber for health!
