You will have to oil this board with food grade mineral oil....I would have given a five but...This board is close to the most top of the line a normal person can afford to use with very high carbon, hard steel, high quality knives as well as avoiding micro plastics. However, after research, I found that the factory wax finish goes away quickly and the john boos boards are dry and notoriously thirsty. They don't advertise directions and pre-use care...you will have to buy food grade mineral oil to saturate this board to prevent it drying out and to repel juices from foods getting in deep to make sanitation easier and definite after use. They sell an over priced thin mineral oil, but I suggest Walgreens food grade mineral oil found in the laxitive section. It is there...I just bought some. It is half the price, and thicker.
