We got this knife as a gift from our wedding registry, and wow, it is worth every penny! It cuts through everything like butter. I compared it to my old knife, and there’s no competition. This one is so smooth and easy to maneuver, while my old knife would cut through the same thing but squish it along the way. The handle is also incredibly comfortable. I don’t know how I ever cooked without this knife in my kitchen!

Love the blade shape and sharpness is great out of the box! I prefer the handle shape of the artisan series to some other knives I've tried in the past.
Right out of the box this knife is sharp and ready to use. The handle and lack of bolster make pinch gripping or just holding by the handle super easy. I really appreciate that the edges on the spine of the blade are so nicely rounded. It makes using it so much more comfortable for long prep sessions. The hollows make the job easier also. While cutting some large porcini mushrooms there was some sticking to the side of the blade, but very minimal. I have only had the knife for a couple weeks and use it with wooden (not bamboo) cutting boards so I can’t say for certain how long the edge will be retained but no dulling yet!
My first purchase of a Miyabi. The knife is comfortable to use during large volumes of prep.
