My wife brought a lot of high quality kitchen knives into my life when we got together, despite neither of us really being cooks before the COVID shutdown. In the years since I've really taken to it. We have two Miyabi's; one Santoku, and one 8 inch evolution. We also have Messermeisters, Misens, and uh.. crap i forgot the name of the other main brands we have several of... frankel? Anyways. this Miyabi chef's knife is my 100% go to. I do almost everything with this knife. I have really big hands and the depth of the blade is amazingly well fit for me. Because of the depth, the length is deceptive. it doesn't look like an 8 inch knife. but it cuts like one. Chicken. Beef. Lamb. ripping corn from the cob, dicing onions, mincing garlic, I've even carved the ribs from a steak with it, (though the depth did make that more of a a challenge than how it would have been with a bone knife or even a shallower French style blade. Even our knife sharpener loves this knife.

Great knife, love the sleek design. Very lightweight and easy to handle.
I was looking for a great quality chef’s knife that was reasonable in price to start my personalized collection. I was able to try this one out prior to buying and it cut like butter. Extremely sharp and have not had issues with chipping breaking.
I have been a professional chef for over 6 years ranging from Michelin star kitchens, however this is my first Miyabi, I love the sharpness right out the box, the design is ergonomic, cuts are very precise, this is not a cheaply crafted knife either like you see with many others. It is a design that is durable and built to last. I love the sharpened and feel of Japanese blades, but also prefer western blades for their blade height. This is a beautiful combination of both.
I purchased this chef knife after using the 5.5" miyabi evolution knife for a while. The quality is wonderful for the price and perfect for a home chef like me. The longer 8" model has great versatility and is the perfect weight to hold in my hand. I'm sure this will last a long time.

This is a very good all purpose knife. I like it for some things, but overall, the Chinese chef knife works better for me. However, I will be keeping both..You can't go wrong with either.
The knife is extremely sharp, and robust yet lightweight. I will definitely be reaching for this knife often in the commercial kitchen where I work. Quality purchase!
