Amazing chef's knife! I am so glad I made this choice. A balanced mix between German and Japanese knife construction. The edge is so sharp out of box, the handle makes it comfortable to use and the balance is perfect. Highly recommend for those serious about their knife game.
This is a great knife to add to the roll or to the kitchen drawer very sharp and dependable.
While I have several other fine knives the 6” Miyabi birchwood has now become my favorite as my most purpose knife. I’ve only had it for a few weeks and often find myself reaching first for another but then recall and retrieve my new Miyabi. I’m still impressed with its feel and sharpness. This will be my last knife and holds top choice now.

Beautiful wood tone for lighter or neutral kitchens. The size is perfect for chopping veggies and prepping.

Don't let the shorter, less-menacing length fool you, though, as this knife is SHARP. I recommend storing this in a safe place when not in use. I keep it in the original box, but I'm looking at getting a storage roll bag.
