The Lundberg Organic Thin Brown Rice Cakes (Lightly Salted) are one of the cleanest and simplest snack options you can find, especially if you’re trying to eat gluten-free or avoid heavily processed foods. What really stands out is the ingredient list—just organic brown rice and a bit of sea salt—so it feels very “safe” and straightforward compared to other packaged snacks.  The texture is thin and crispy rather than thick and airy, which makes them more enjoyable to eat and less “styrofoam-like” than traditional rice cakes. I love it!

I prefer these to the round, much thicker style you usually see. These thin rice cakes have some "bite" in their texture, as they are made of brown rice. I mash up 1 can of white beans (drained), 1 avocado, a squeeze of lemon and some "everything bagel" seasoning. This makes 2 servings of a light lunch, with 1 sleeve of these rice cakes per serving.

The size of these is perfect for spreading peanut butter and salt on top for a mid day boost. I usually microwave mine about 30 seconds and do maybe 3 at a time and they provide a great crunchy, healthy snack! They are perfect when you are on the go! Again, GF and beneficial to any one's diet.
