Since I've retired, I've been learning to bake breads. I found a recipe for bagels which includes Barley Malt Syrup and everybody that tastes them says they're as good as the bagels we used to get in NY and NJ. I'm on my third jar and need to order more.
This is the classic ingredient used in rye breads, especially in Russian ones. I bake rye breads which include: rye sourdough, scald (rye flour, non-diastatic malt powder, spices like coriander and caraway), and of course the BARLEY MALT Syrup in addition to simple sugar. This ingredient gives the bread additional aroma and it adds additional food (starch maltose) for yeast. BARLEY MALT Syrup far better than molasses/treacle in baking bread.

I have tried it in cookies and believe it or not, homemade BBQ sauce. Adds a nice flavor but it is so thick and sticky its a bit hard to use. But I like the taste. I have also tried adding to milk, VERY hard to mix in, but gives a nice flavor to milk also. Added to hot chocolate and it was great!
