I don't know why this brand of allulose syrup is dark, but it tastes sooooo much better! It tastes richer and more caramelized than the clear kind I used to get. I'm so glad I tried this and took a chance because it's closer to maple syrup than what I used to get. I love this stuff. The consistency is still a little thinner than real maple syrup but I don't mind. Keep in mind allulose isn't as sweet as sugar so you'll need to adjust recipes for that if necessary.
