I am happy I purchased the nonstick cooling rack. After frying fish and chicken I noticed placing them on a paper towel made the crust somewhat soggy. Upon placing fried food on the cooling rack allows the meat to cool and stay crispy also while draining the fat. Best purchase ever.

If you've been spatchcocking chickens and turkeys using low-rimmed baking sheets, this one will be your new best friend. It's perfect for roasting at high heat as it allows the oven heat to circulate around the roasted food. I use Nordic Ware half sheets so frequently and they are quite durable and very easy to clean. I love that the rack fits perfectly and to the edges of the pan, allowing for roasting of about a 12-lb turkey that's been spatchcocked. Several of the pans I have are at least 10 years old and just beginning to show their age, so I know this one will last a good while. I hand-wash these with just a bit of Dawn or occasionally Barkeeper's Friend if they've got burned grease on them.
