We followed the recipe on the back of this cornbread mix and the result was a moist and fluffy interior, crusty and crackly top + edges, and a beautiful corn flavour. Never had I imagined that I could bake fresh muffins as breakfast before going to work! This mix is a convenient pack. Easy to use. Only need to add two eggs, 1/2 cup of melted butter and 1 cup of water and bake for 35 min. All other ingredients included in the pack already. The taste was great and it can make 12 muffins. A very good deal.

Back in the day, I used to go through boxes of Jiffy. I love the convenience and the taste is just right for me: a little sweet, but not too. I have also bought Bob's Red Mill cornmeal to make my own, but this tastes just as good. Since I live in Japan, this is really convenient when I want a little cornbread but don't want to have a whole bag of cornmeal taking up space in the refrigerator (bugs and humidity.) And of course I can count on quality from this brand. The packaging makes it very easy to use, too.
I love Bobs Red Mill Products and this cornbread mix was no exception. Easy to use. Easy one bowl mix with great directions. It makes a ton. I used it for the topping of 4 large tamale casseroles. Comes out with a crispy crust and is light, fluffy and delicious inside. Will definitely re-order.
