The taste is very surprising but delicious. I use it in my yogurt and for marinades and meat sauces. For those who prefer a more traditional approach, it's very good on toast.
This smoked honey really shines when it's drizzled over food right before serving, same as what you would do with finishing salts. It's particularly yummy over bitter greens like arugula, radicchio, and baby kale--the sweetness helps tame the bitterness and the smoke flavor really stands out. I wouldn't suggest cooking with this honey because the smoke flavor may get lost with the other ingredients being cooked. I plan to drizzle this over cooked vegetables next.
