These beans are a favorite in my house and always popular with guests. I cook them in an insta-pot with onion, dried chiles, cumin, coriander, paprika, salt, and lots of black pepper. A simmer after the pressure is release perfects the broth. Great with tomato, smoked paprika, lime juice. They can then be blended for those who prefer a smooth or chunky soup. Healthy, cheap, and delicious.

I use for any recipe calling for Pinto Beans. The texture remains a bit firmer. They are flavorful and give a creaminess.
Dry cannellini beans are very hard to find, so I decided to try these instead. They are the size of cannellini but a very light tan color instead of white when cooked. Great flavor & texture - could be used in any white bean or pinto bean recipe.

These are really interesting little beans. They start out a little waxy but work their way into a super creamy delicious puree.

A lovely bean, makes a beautiful pot of whole beans and amazing refries. I recommend soaking overnight, do not add salt until they are pretty much cooked through. this is a great being to keep on hand in your pantry, but not for years as beans are better when they are fresher.
