Known as 'Bai Cha' in Chinese, white teas are made from the newly sprouted 'buds' of the tea plant. These buds have silvery white hair 'down' that provide a honey texture to the brew. In making white tea, the buds are 'heat braised' in covered pans or dried in direct sun. As a result there is little or no oxidization. Fujian Fujian Province is situated along China's southeastern coast. Fujian's subtropical, marine climate is especially conducive to tea cultivation. The province has a 1,600 year history with tea. The earliest written record of tea production in Fujian is kept on a stone tablet at the 'Lian Hua Feng' (Lotus Peak) in Nan'an County. Season The young leaves of Imperial White are best in early spring. If stored well (airtight in dark, low humidity), the leaves retain flavor over time. I don't know what white tea is supposed to taste like, but I enjoy this flavor. The leaves are big when they uncurl. I like the packaging - the lid fits nicely and I'll reuse the metal can for loose tea from the market. The caffiene level doesn't seem high, I had some in the evening and slept OK, but I don't brew it that strong. The packaging is very pretty with the stout size, it looks nice on my counter.

This is one of my favorite white tea, I get the maximum benefit taking on an empty stomach or 3 hours before/after meal. Sometimes, I drink this with tea cakes or carrot cake.
