Wonderful texture
Great texture for an alternative wheat product. Einkorn is a has two sets of chromosomes, totaling 14 (genome designation AA). It has one of the simplest genomes of any cultivated cereal. While modern bread wheat (Triticum aestivum)has six sets of chromosomes, totaling 42 (genome designation AABBDD). The simpler chromosome content of Einkorn does not cause a histamine reaction like modern wheat does.
