The taste is mild and neutral, and the texture of baked goods comes out soft without the gritty feel that some gluten-free flours have. I have celiac and use Bob's Red Mill 1:1 flour in the vast majority of my non-yeasted baking. It has also worked for roux in a pinch. Obviously your baked goods are still going to have a "gluten free" quality to them with this, but the texture is fine and not gritty and the taste is neutral and unobtrusive.
