I have celiac and use Bob's Red Mill 1:1 flour in the vast majority of my non-yeasted baking. It has also worked for roux in a pinch. Obviously your baked goods are still going to have a "gluten free" quality to them with this, but the texture is fine and not gritty and the taste is neutral and unobtrusive.
This gluten free blend is a great substitute for traditional flour. You can use it in all your favorite recipes and there is no compromise on the taste. I've made several things with this, and no one can tell it's gluten free! Very versatile!
