I have tried making zephyr (Russian marshmallow) at home so many times and failed each time. My zephyr turned out just perfect the first time I used this agar! I am in love. So I'm still playing around with this because I'm not sure how much to put in to make a jam before it changes the flavor. It's an ultra fine powder of decent quality and from the little Ice used seems to have no taste. Wish there was some recipe guidelines though so I know how much is needed to get jam consistency
