I've tried Cassava Flour from 2 brands- Bob's Red Mill & Otto's. I can't tell the difference between them. Both are high quality, easy to bake with, and useful for creating gluten-free dduk-boki (spicy Korean ricecakes). My food sensitivities keep me on a diet that is strictly free of: gluten, dairy, & refined white cane sugar. Using this flour mixed with almond flour & water, I was able to re-create cylindrical Korean rice cakes. Using a large pot of boiling water & a steamer made for that pot, I steamed the Cassava rice cakes for 7-8 minutes The results were were super chewy & delicious! This ingredient was a game changer for me, as I now have a legitimate substitute for ingredients that call for barley malt/glutinous rice flour. I actually find this ingredient to be easier to work with than the original ingredients that I can no longer digest (which is rare & wonderful to discover)! :) Research some recipes that use Cassava flour & give it a try! It's a great healthy alternative to traditional starch flours & one that you won't be disappointed by.
